Smith started all four seasons for the Beavers as a quarterback, taking over the position halfway through his 1998 redshirt freshman campaign and holding it until his 2001 senior year.

Under Dennis Erickson’s direction, he captained the Beavers to their most successful season ever as a junior in 2000. The Beavers set a school record with their 11-1 record, shared their first conference championship in thirty-six years, and concluded the season ranked fourth in the nation.

T. J. Houshmandzadeh and Chad Johnson, two future NFL stars, were among his wide receivers on the squad. Smith won the Fiesta Bowl MVP award.

On November 29, 2017, Smith was appointed head coach of Oregon State. Six games into his third season, on October 9, 2017, Gary Andersen announced his resignation, and he took over as head coach at his alma mater during a turbulent time. When Smith arrived, Oregon State had finished 12–36 in the previous four seasons.

Smith made waves as Oregon State’s leader in his fourth season, going 7–6 for the first time and earning an invitation to the 2021 LA Bowl.

The Beavers advanced to the 2022 Las Vegas Bowl, where they easily defeated Florida 30–3 to record their third 10-win season in program history.

In 2017, Smith signed a five-year contract that paid him $1.9 million a year and automatically renewed for an additional year after each season with six wins.

Smith was granted a three-year extension through the 2025 season on January 7, 2020. Smith’s contract was revised following his first winning season in 2021; it now keeps him signed through 2027 and mandates that he start earning $3.25 million in 2022.

Following the program’s historic 2022 season and victory over Oregon, Smith was awarded a new contract that included a sizable pay raise. Starting in 2023, the new six-year contract increased his compensation to $4.85 million.

Smith’s new contract supposedly put him above his in-state colleague Dan Lanning and ranked him fifth in the Pac-12 in terms of salary.

On November 25, 2023, Smith was formally appointed head coach at Michigan State. Since Mel Tucker’s job was terminated in late September, the position had been empty.
